    第一次做潮州小吃

    在婆婆和外婆的指导下,尝试了一下我喜欢的蚝仔烙和反砂双拼。

    蚝仔烙

        原料:1斤蚝仔,用盐反复冲洗干净,取两大勺生粉、适量胡椒粉(按各人喜好)、一点鸡粉,配上新鲜的土鸡蛋、一小把切好的葱段,煞是鲜艳。

    待油热后,将搅拌好的原料分成两次下锅煎饼,先大火后小火,翻炸至表面金黄即可出锅啦。味道还是不错滴。

    反砂双拼之芋头红薯

        芋头和红薯削皮后切成大块,锅内多多倒油,油热后放入番薯、芋头,先大火后转中火炸6分钟左右,怕不熟可以拿筷子扎来试下,就是切忌炸过头。

        把炸好的番薯和芋头盛出待用,把油倒出,在锅内倒入少量冷水,水开后放适量白糖,不停翻搅,约6分钟的时候放入切好的葱末,大约10分钟左右的时候,就开始变得粘稠并且开始冒白色的气泡啦,这时就可以关火了。

        把炸好的番薯和芋头倒进锅里,不停翻动(这个过程比较折磨人),确保糖浆能均匀粘在每一块上,直到糖浆变干呈白色结晶状固定在番薯和芋头表面就可以啦,虽然外表一般般,不过味道还是好好的哦。
